An industrial park on the edge of Thurso‘s western suburbs isn’t the first place you might expect to find a distillery, and the modern, container-like warehouses don’t look like one either. But Wolfburn whisky has provenance: a distillery bearing this name was originally founded nearby (on the Wolf Burn) in 1821, at one time becoming the largest by production volume in Caithness. This reincarnation is a much more modern affair, with the first whisky being bottled in 2016. The entire operation takes place in a single, cavernous room: perhaps lacking in charm, but allowing a very clear view of the whole production chain – even bottling takes place here. Tastings were generous, at least on our visit – consider requesting a dram to take away if you are driving.
