The traditional whitewashed buildings at Dallas Dhu mark the official end point for Speyside’s Malt Whisky Trail – but this distillery is quite different to all of the others on the route. Whisky production ceased here in the 1980s, and hasn’t restarted; the site is now cared for by Historic Environment Scotland, and a good audio guide recreates the sounds of yesteryear. Since this is no longer a working site you can get closer to the machinery with few of the usual safety concerns, and explore at your own pace without being marshalled along by over-zealous tour guides. There should also still be a tasting at some point! Overall then, most of the elements of a distillery visit are still present, but we’d prefer to visit one where spirit is still flowing.
