Scotland’s northernmost distillery occupies one of the former RAF buildings at Saxa Vord on the Isle of Unst. Production began in 2015 and initially encompassed both whisky and gin; whisky now seems to have taken a back seat while the number of gin products has multiplied rapidly. Our informal “tour” (which felt more like a chat with a tasting – there’s not a lot to see except for the tiny still) introduced us to a staggering nine separate gins, each incorporating their own interesting combination of botanicals.
