Move over Bruichladdich: there’s a new kid on the block producing whisky in wacky and unconventional ways. Located in the morning shadow of Arthur’s Seat, Holyrood Distillery was the first new single malt distillery in Edinburgh city centre since 1925 when it was founded in 2019. The distillery now produces a staggering array of products spanning new make spirit, whisky, gin, rum and vodka, also experimenting with a wide variety of yeast types and barrels. There are an equally wide array of tour types at the time of writing, to suit all budgets and schedules – but try to book an experience which includes the well-laid-out production areas.
