Space is at a premium in Edinburgh city centre, so you have to go underground for one of the city’s most oversubscribed tourist attractions. Edinburgh Gin Distillery started up in 2010 in an almost comically cramped basement at the west end of Princes Street – and somehow it’s become a roaring success. Tours are often booked out weeks (or in the case of weekends, months) in advance and are surprisingly entertaining – though they have recently become rather expensive. The experience includes a comprehensive and entertaining talk on the capital’s distilling history, a look around the tiny production area, a browse of the botanicals, and of course a tutored tasting in one of a series of speakeasy-style vaults – one of which is pictured above. Edinburgh Gin has a second production base in Leith, but it’s not currently open to visitors.
